You've got Peter running the boat and Gregory running the kitchen, and between the two of them they've got this place figured out from every angle. Peter's forty-seven, Brazilian, and basically salt water at this point — the guy's been fishing longer than most people have held a job, and after eight-plus years living out in the archipelago, something happened that doesn't happen to just anyone: the Guna community let him in. Not as a tourist, not as an outsider. As one of theirs. So when he talks about the islands, he's not reciting facts — he's telling you secrets nobody puts on a map.

Gregory's the one who takes whatever Peter's world hands over and turns it into something you'll be thinking about for weeks. He's Panamanian, and he's been in kitchens long enough that he doesn't cook from recipes anymore — he cooks from whatever shows up. A fisherman pulls alongside with the morning's catch, a boat cruises by loaded with fruit and vegetables, and Gregory's already working out what it's going to become. He doesn't go looking for the ingredients — the ingredients find him, and somehow he always turns them into a menu that makes you forget you're eating on a boat in the middle of nowhere.

Between Peter's secrets and Gregory's instincts, every day out there ends up being its own little story.
